It's now 2024 and we've done it again with 3 years of experience under our belt. Fermented for 12 months and slow-cooked for 10 hours, we bring you a slightly smoother sacrifice to the powers of passing time.

The limited edition offering shares a basic recipe of our flagship The Standard, but with the surprising character that comes with age. Fresh and fermented orange habaneros with four other chile varieties combine to create a vibrant and versatile hot sauce. Fermented with San Juan Sea Salt and slightly caramelized with organic brown sugar, this is a special product made with love from us to you.
Ingredient Focus: Caramelized Habaneros, BBQ
When you go beyond its famous heat, the often-misunderstood habanero provides a diversity of delicious fruity flavors and floral aromas. The year-long fermentation adds a slightly bitter, tannic note and the 10 hours of cooking result in a darker, sweeter heat. It's perfect on cold noodles or anything you want to throw on the bbq.

Our peppers come from small, local farms and our salt is harvested from the deep waters surrounding the San Juan Islands (sanjuanislandseasalt.com). Our shipping materials are recycled from a local comic shop (shop.thecomicsplace.com). We naturally ferment our sauces for at least 6 weeks and every bottle of our small-batch products are filled, sealed, packed, and shipped by hand HOSA is made by and for people who care about the impact that even small purchases can have on their own locale as well as the environment at large.
